Summer veggie gratin

I made this America’s Test Kitchen recipe tonight – SOOOO yummy.  First thing is slicing and salting the veggies, allowing 30 – 45 minutes for water to drain off, then carmelize onions and begin assembling.

The oil/garlic/thyme mixture that gets sprinkled over them is SO good.

Bake, sprinkle with bread crumbs (real ones) and parmesan, and voile’!

Tom, who of the many career paths he COULD have chosen, did NOT choose food critic (although he could have been one, believe me!), said “Very Good!”

ahhhhhh.  love that phrase!
